With the release of Trafalgar’s USA & Canada 2013 brochure comes the debut of a new Taste of North America program. The program features four itineraries that span from eight to 14 days, focusing on the culinary treasures of each region they visit. Itineraries include:

• The 8-day San Francisco & Wine Country Delights travels from San Francisco to Napa, with plenty of stops in between; highlights include multiple wine tastings and tours, such as a private group event at the Castello di Amorosa ($2,255)

Honoring Southwest and Native American culinary traditions, the Hyatt Regency Tamaya has announced a long-running weekend culinary program that features New Mexico’s most popular crop: green and red chiles.

The Chile Harvest package is offered on weekends through Oct. 3. According to the itinerary, guests are welcomed on Saturday afternoons, and enjoy a dinner at the onsite Corn Maiden restaurant, where a resort chef will join them to share the history of chile in New Mexico. On Sunday, guests are accompanied by a resort chef to visit the Grower’s Market in Corrales, where together the group will choose chiles to include in their dinner that evening. They’ll return to the resort to enjoy a chile-infused Ancient Drumming treatment at the Tamaya Mist Spa, and will relax afterwards with a Chile Martini at the Rio Grande Lounge.

After they’ve left the resort, guests should expect a souvenir in the mail—a collection of chile recipes and a chile rista, or string of dried red chiles.
