Opened in September 2017 and led by Australian executive chef Paul Bentley, Bovine now invites guests to its Casa Dragones Table, named after the limited-edition, 100 percent pure blue agave tequila that diners sip on during their private meal.
The Casa Dragones Table is hosted inside of Mesa Dragones, Bovine’s wood-paneled private dining room that seats up to 10 guests. There, diners will enjoy a 6-course meal prepared by executive chef Bentley. Highlights of the meal include beef tartar, ox tail tortellini, white fish sashimi with chile and orange fermented puree, coriander and citrus vinegar, plus lemon pie and more.
